- 1 small boiled sweet potato - diced into 10 pcs
- 2 eggs beaten
- 2 teaspoons olive oil
- 2 tablespoons fresh fennel diced
- 1 teaspoon rosemary
- 1 clove garlic, finely minced
- Heat oil in a small pan, add rosemary and garlic, and sauté.
- Add sweet potato cubes and sauté till slightly brown.
- Add eggs and serve hot.
