Ingredients

  • 1 small boiled sweet potato - diced into 10 pcs
  • 2 eggs beaten
  • 2 teaspoons olive oil
  • 2 tablespoons fresh fennel diced
  • 1 teaspoon rosemary

Method

  • Heat oil in a small pan, add rosemary and garlic, and sauté.
  • Add sweet potato cubes and sauté till slightly brown.
  • Add eggs and serve hot.
