Mixed Bean Salad Serves
Ingredients
- 1 cup black beans- drained and rinsed
- 1 cup kidney beans
- 1 cup chickpeas
- 4 Tablespoons red onion- chopper
- 1 cup chopped red, yellow and green peppers
- 1 stalk celery
Dressing
- 2 teaspoon dried basil
- 1.5 teaspoon Dijon mustard
- 1 clove garlic
- 4 T fresh parsley- chopped
- 4 T cider vinegar
- Salt and pepper to taste
- 7 teaspoons vegetable oil
Method
- Mix beans and vegetables
- To prepare dressing, combine all ingredients except oil and whisk in oil gradually then pour over bean mixture
