COVID-19 Update

In line with international standards to provide you with the safest environment, we have introduced the following additional precautionary measures at our facilities:

  • Limiting the number of people within our facilities to ensure physical distancing can be maintained.
  • Restricting access to patients with scheduled appointments only.
  • Restricting accompanying adults to only one person.
  • In the case of children under 12, allowing access only to those with a scheduled medical appointment.

Grilled Vegetable and Goat Cheese Salad

Grilled Vegetable and Goat Cheese Salad

Ingredients

  • 1 zucchini sliced into 1 cm thick circles
  • 1 small eggplant sliced into 1 cm thick circles
  • 1 carrot into 1 cm thick circles
  • 60 g crumbled goat cheese
  • 2 walnuts- crumbled
  • ½ cup cauliflower florets
  • ¼ cup balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp Dijon mustard

Method

  • Grill all the vegetables and layer in the salad plate
  • Add the goat cheese and walnuts
  • Whisk the balsamic vinegar with the Dijon mustard and whisk in the olive oil
  • Dress the salad with the vinegar
