Ingredients
• 2 Tomato- diced
• 1 Apple- peeled and shredded finely
• 1 Carrot- shredded
• 2 Cucumbers- diced
• 1 small onion- diced
• 1 bunch mint- shredded
• 1 cup arugula (bakle)
• 1 Green pepper- diced
• 4 radishes- diced
• ½ head of lettuce – shredded
• 60 g grilled meat- cut into 1 cm strips
• 60 g of low fat cheese-crumbled
• Toasted pita bread- as desired
• 2 tbsp vinegar
• 3 tbsp olive oil
• Lemon juice – to taste
• Pomegranate molasses- to taste- optional
• Sumac- optional
Method
• Mix all the vegetables in a large bowl add the meat and the cheese
• Mix the oil with lemon juice, vinegar, pomegranate molasses and sumac
• Add to vegetables
• Scatter toasted pita bread pieces on top
If you don’t have cajun spices available ready-made, you can make you own by mixing paprika, cayenne pepper,
garlic clove , black pepper, basil, tarragon and thyme leaves.
